Ingredients

  • 12 oz boneless skinless chicken breast
  • 2 tsp Greek seasoning (or dried oregano + garlic powder + paprika)
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1/2 cup plain Greek yogurt
  • 1 clove garlic(optional)
  • 1 tsp dried dill(optional)
  • 1/2 cup cucumber, diced(optional)
  • 4 cups romaine lettuce, chopped
  • 1 cup tomatoes, diced
  • 1/4 tsp salt(optional)
  • 1/4 tsp black pepper(optional)

Instructions

  1. 1

Prep (10 minutes): Dice the chicken into bite-size pieces. In a bowl, mix Greek seasoning, olive oil, lemon juice, salt, and black pepper; toss with the chicken.

  2. 2

Cook (12 minutes): Heat a large skillet over medium-high heat. Add the chicken and cook, stirring occasionally, until cooked through and browned, about 10–12 minutes.

  3. 3

Make the yogurt sauce (during the last few minutes): In a small bowl, stir together Greek yogurt, minced garlic (if using), and dill. Add a splash of water if you want it thinner.

  4. 4

Assemble: Divide lettuce and tomatoes between 2 bowls. Top with the cooked chicken and drizzle with the yogurt sauce. Add cucumber if using.
