Ingredients

  • 12 oz boneless, skinless chicken breast
  • 2 tbsp gochujang
  • 1 tbsp soy sauce
  • 1 tsp honey
  • 1 tbsp lime juice
  • 2 cloves garlic
  • 1 tbsp olive oil
  • 2 cups cooked white rice
  • 1 cup cucumber
  • 1/2 cup plain Greek yogurt
  • 1/4 tsp salt(optional)
  • 1/8 tsp black pepper(optional)

Instructions

  1. 1

Prep (about 15 minutes total): Mince the garlic. Slice the cucumber. In a bowl, mix Greek yogurt with 1 tbsp lime juice and a pinch of salt and pepper to make the lime crema.

  2. 2

Cook (about 20 minutes total): Slice chicken into thin cutlets. In a bowl, stir gochujang, soy sauce, honey, and half the minced garlic. Toss chicken with the glaze.

  3. 3

Pan-sear: Heat olive oil in a skillet over medium-high heat. Add chicken in a single layer and cook 6–8 minutes per side (or until cooked through). If glaze thickens too much, add a splash of water to loosen.

  4. 4

Serve: Divide rice into bowls. Top with glazed chicken, add cucumber, and drizzle with lime crema. Finish with remaining garlic if desired and a squeeze of extra lime.
