Ingredients

  • 2 cups Cooked jasmine rice (cold, day-old preferred)
  • 2 large Eggs
  • 3 cloves Garlic (minced)
  • 3 tbsp Soy sauce
  • 2 stalks Scallions (green parts, sliced)
  • 1 tbsp Neutral oil (for frying)
  • 1 tsp Sesame oil (optional)(optional)

Instructions

  1. 1

Prep (10 minutes total): Mince the garlic, slice the scallions, and lightly break up the cooked rice so the grains separate.

  2. 2

Scramble eggs (about 3 minutes): Heat a large skillet or wok over medium-high heat with the neutral oil. Add beaten eggs and scramble until just set, then transfer to a plate.

  3. 3

Stir-fry garlic and rice (about 6 minutes): In the same pan, add garlic and stir for 20–30 seconds until fragrant. Add the rice and stir-fry, pressing and tossing to heat through and lightly dry the grains.

  4. 4

Season and finish (about 1 minute): Stir in soy sauce (and sesame oil if using). Return eggs to the pan, toss to combine, and cook until everything is hot. Turn off heat and fold in scallions.
