Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 6 corn tortillas
  • 1 avocado
  • 3 tablespoons lime juice
  • 4 cloves garlic, minced
  • 2 cups shredded cabbage
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/4 cup sour cream(optional)
  • 1/4 cup cilantro, chopped(optional)
  • 1/2 teaspoon salt

Instructions

  1. 1

Preheat oven to 400°F. Brush tortillas lightly with olive oil and bake 8-10 minutes, flipping once, until crisp.

  2. 2

Season shrimp with chili powder, cumin, and half the salt.

  3. 3

Heat remaining oil in a skillet over medium-high heat. Add garlic and cook 30 seconds, then add shrimp and cook 2-3 minutes per side until pink and opaque. Finish with 1 tablespoon lime juice.

  4. 4

Blend avocado, sour cream, remaining lime juice, and a pinch of salt until smooth to make the crema.

  5. 5

Spread crema on each crisp tortilla, top with cabbage, shrimp, and cilantro. Serve immediately.
