Ingredients

  • 2 steaks ribeye or sirloin steak
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil
  • 3 tbsp unsalted butter
  • 4 cloves garlic
  • 1 tsp fresh thyme (or rosemary)(optional)
  • 1/2 cup low-sodium beef broth (or water)
  • 1 tbsp lemon juice(optional)

Instructions

  1. 1

Pat the steak dry, then season both sides with salt and black pepper (about 10 minutes prep, including seasoning).

  2. 2

Heat a large skillet over high heat until very hot. Add olive oil, then sear steaks without moving them until well-browned, about 3–4 minutes per side (about 12 minutes total cook time).

  3. 3

Reduce heat to medium. Add butter, garlic, and thyme to the skillet. Spoon the garlic butter over the steaks for 1 minute.

  4. 4

Add beef broth to the pan and scrape up browned bits. Simmer for 1–2 minutes until slightly reduced. Stir in lemon juice if using.

  5. 5

Transfer steaks to a plate and rest for 3 minutes. Spoon pan sauce over the steaks and serve.
