Ingredients

  • 4 pieces (about 1 lb) boneless skinless chicken thighs
  • 3 tbsp unsalted butter
  • 4 cloves, minced garlic
  • 1 tbsp olive oil
  • 2 tbsp, chopped fresh parsley
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup chicken broth
  • 1 tbsp lemon juice(optional)

Instructions

  1. 1

Pat chicken thighs dry and season both sides with salt and pepper (5 minutes of the prep time).

  2. 2

Heat olive oil in a large skillet over medium-high heat. Sear chicken thighs 5-6 minutes per side until golden and cooked through (internal temp 165°F), about 12 minutes total. Transfer to a plate.

  3. 3

Reduce heat to medium-low. Add butter and minced garlic to the same skillet, stirring for 1-2 minutes until fragrant and lightly golden.

  4. 4

Pour in chicken broth (and lemon juice if using), scraping up browned bits, and simmer 1-2 minutes to slightly reduce the sauce.

  5. 5

Return chicken to the skillet, spoon the garlic butter sauce over top, and simmer 2 minutes. Sprinkle with fresh parsley and serve.
