Ingredients

  • 2 large, thinly sliced yellow onions
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 can (14 oz) crushed tomatoes
  • 2 cups vegetable broth
  • 4 cut into strips corn tortillas
  • 2 oz, grated comte cheese
  • 4 thick slices baguette slices
  • 2 cloves, minced garlic
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • to taste salt and black pepper
  • 2 tbsp, chopped fresh cilantro(optional)
  • 1 cut into wedges lime(optional)

Instructions

  1. 1

Caramelize the onions: melt butter with olive oil in a large pot over medium heat. Add sliced onions with a pinch of salt and cook, stirring occasionally, for 15 minutes until deeply golden and soft.

  2. 2

Add garlic, cumin, and smoked paprika; cook 1 minute until fragrant. Stir in crushed tomatoes and vegetable broth, bring to a simmer, and cook 8 minutes. Season with salt and pepper.

  3. 3

While the soup simmers, heat oven to 400°F (200°C). Toss tortilla strips with a drizzle of oil, spread on a baking sheet, and bake 6-8 minutes until crisp.

  4. 4

Top baguette slices with grated comte and bake alongside the tortillas for the last 4-5 minutes until melted and bubbling.

  5. 5

Ladle soup into bowls, top with crispy tortilla strips and a comte toast, and finish with cilantro and a squeeze of lime.
