Ingredients

  • 2 large Yellow onions
  • 2 tbsp Unsalted butter
  • 1 tbsp Olive oil
  • 1 clove Garlic(optional)
  • 3/4 cup Beef broth (or vegetable broth)
  • 1/2 tsp Thyme (dried)(optional)
  • 1/4 tsp Salt(optional)
  • 1/4 tsp Black pepper(optional)
  • 4 slices French bread or baguette
  • 3/4 cup Gruyère cheese

Instructions

  1. 1

Slice the onions thinly. Heat the butter and olive oil in a large skillet over medium-high heat.

  2. 2

Add onions (and garlic if using). Cook, stirring often, until deeply browned and caramelized, about 15 minutes.

  3. 3

Sprinkle in thyme (if using) and black pepper. Pour in the broth and scrape up the browned bits from the pan. Simmer until slightly reduced, about 10 minutes.

  4. 4

Meanwhile, toast the bread slices until crisp. Divide the soup between 2 bowls or keep in the skillet.

  5. 5

Top with toasted bread and a generous layer of Gruyère. Broil until the cheese is melted and lightly browned, 1–2 minutes, then serve.
