  • 300 g boneless skinless chicken thighs
  • 1 tbsp olive oil
  • 1 large onion, thinly sliced
  • 2 garlic cloves, minced
  • 400 g canned diced tomatoes
  • 1 tsp garam masala
  • ½ tsp ground cumin
  • 60 ml heavy cream
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp fresh cilantro leaves, chopped(optional)

    Heat the olive oil in a large skillet over medium heat (2 minutes). Add the sliced onion and sauté until softened, about 4 minutes.

    Stir in the minced garlic, garam masala, and cumin; cook for 1 minute until fragrant.

    Add the chicken pieces, season with salt and pepper, and brown on both sides, about 4 minutes.

    Pour in the diced tomatoes, bring to a gentle simmer, and cover. Cook for 15 minutes, stirring occasionally, until the chicken is cooked through and the sauce thickens.

    Stir in the heavy cream and heat for another 2 minutes without boiling. Adjust seasoning if needed.
