Ingredients
- 190 g chicken breast
- 1 tbsp olive oil
- 1/4 cup onion
- 1 clove garlic
- 1 tbsp Dijon mustard
- 1/2 cup chicken broth
- 1/4 cup white wine (or extra broth)(optional)
- 3/4 cup green peas
- 300 g baby potatoes
- 1/2 tsp salt
- 1/8 tsp black pepper
- 1/2 tsp dried thyme(optional)
Instructions

Boil or steam baby potatoes until tender, about 15–18 minutes. Drain.

Season chicken with salt, pepper, and thyme (if using). Sear in olive oil 6–8 minutes until cooked through.

Remove chicken to a plate. In the same pan, cook onion 3 minutes, then add garlic 30 seconds.

Add Dijon mustard and stir, then pour in chicken broth (and wine if using). Simmer 3–5 minutes to thicken.

Stir in peas and simmer 3 minutes until hot.

Return chicken to the pan to coat. Serve with potatoes.
