Ingredients

  • 250 g Italian sausage (mild or sweet)
  • 1 small fennel bulb
  • 1 can (15 oz / 425 g) white beans (cannellini), drained and rinsed
  • 1 cup (240 ml) crushed tomatoes
  • 2 cloves garlic
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 0.25 tsp red pepper flakes(optional)
  • 0.5 tsp kosher salt(optional)
  • 0.25 tsp black pepper(optional)

Instructions

  1. 1

Prep (10 minutes): Slice the fennel thinly. Mince the garlic. Drain and rinse the white beans.

  2. 2

Cook (25 minutes): Heat olive oil in a skillet over medium-high heat. Add sausage and cook, breaking it up, until browned, about 6–8 minutes.

  3. 3

Add fennel to the skillet and sauté until softened and starting to turn golden, about 4–5 minutes. Stir in garlic, oregano, and (if using) red pepper flakes for 30–60 seconds.

  4. 4

Add crushed tomatoes and white beans. Simmer gently until the sauce thickens and flavors meld, about 12–14 minutes. Season with salt and black pepper to taste.
