  • 1 cup Cooked shredded chicken
  • 3/4 cup Enchilada sauce
  • 1/2 cup Shredded cheddar cheese
  • 2 small Tortillas (corn or flour), cut into strips
  • 1 tsp Olive oil(optional)
  • 2 tbsp Sour cream(optional)
  • 1 tbsp Chopped cilantro(optional)
  • 2 tbsp Diced red onion(optional)

Instructions

    Preheat oven to 425°F (220°C). Lightly oil a small baking dish.

    In the baking dish, spread a thin layer of enchilada sauce. Add tortilla strips, then layer shredded chicken and remaining enchilada sauce.

    Sprinkle shredded cheddar evenly over the top.

    Bake for 25 minutes, until bubbly and the cheese is melted and lightly browned.
