Ingredients
- 2 lbs Chicken wings (flats and drums)
- 1 cup Corn kernels (fresh or frozen)
- 0.5 cup Mayonnaise
- 0.25 cup Mexican Crema or sour cream
- 0.5 cup Cotija cheese, crumbled
- 1 tablespoon Tajin or chili-lime seasoning
- 0.25 cup Fresh cilantro, chopped
- 2 tablespoons Lime juice
- 1 teaspoon Garlic powder
- 1 tablespoon Vegetable oil

Preheat your grill to medium-high heat (about 400°F) and lightly oil the grates.

Pat the chicken wings completely dry with paper towels and toss them in a bowl with oil, garlic powder, and a pinch of salt.

Place the wings on the grill and cook for 20-25 minutes, flipping halfway through, until the skin is crispy and internal temperature reaches 165°F.

While wings cook, char the corn kernels in a hot skillet or on a grill mat until slightly blackened, then set aside.

In a large mixing bowl, whisk together the mayonnaise, Mexican crema, lime juice, and half of the Tajin seasoning.

Once wings are done, immediately toss them in the creamy lime sauce until thoroughly coated.

Transfer the coated wings to a serving platter and top generously with the charred corn and crumbled cotija cheese.
