Ingredients

  • 2 cups Cooked day-old rice
  • 2 large Eggs
  • 1/2 cup Frozen peas
  • 3 tbsp Soy sauce
  • 1 tbsp Neutral oil (e.g., canola or vegetable)
  • 1 clove Garlic, minced(optional)
  • 2 tbsp Green onions, sliced(optional)
  • 1 tsp Sesame oil(optional)

Instructions

  1. 1

Prep (10 minutes): If the rice is clumped, break it up with your fingers. Mince the garlic and slice the green onions.

  2. 2

Cook (15 minutes): Heat a large nonstick skillet or wok-style pan over medium-high heat. Add the oil, then add garlic (if using) and stir for 15–30 seconds until fragrant.

  3. 3

Cook (15 minutes): Push the rice to one side of the pan. Add the eggs to the empty side and scramble until just set, then mix into the rice.

  4. 4

Cook (15 minutes): Add peas and stir-fry 3–5 minutes until hot and warmed through. Add soy sauce and toss until the rice is evenly coated and lightly crisp, about 5–7 minutes.

  5. 5

Cook (15 minutes): Turn off the heat. Stir in sesame oil (if using) and top with green onions (if using). Serve immediately.
