Ingredients

  • 12 oz pork tenderloin, cut into 1-inch cubes
  • 3/4 cup white rice
  • 1 cup black beans, drained and rinsed
  • 1/2 cup pico de gallo
  • 1/2 cup chicken broth
  • 1/4 cup orange juice
  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1 lime, cut into wedges(optional)
  • 2 tbsp fresh cilantro, chopped(optional)

Instructions

  1. 1

Season the pork cubes with cumin, oregano, and salt. (5 minutes)

  2. 2

Heat olive oil in a large skillet over medium-high heat. Sear the pork cubes on all sides until browned, about 5 minutes.

  3. 3

Add garlic, chicken broth, and orange juice. Reduce heat to medium-low, cover, and simmer until pork is tender and liquid is mostly absorbed, about 20 minutes.

  4. 4

While the pork simmers, cook the rice according to package directions and warm the black beans in a small saucepan. (15 minutes)

  5. 5

Uncover the skillet and increase heat to crisp the pork edges, 2-3 minutes, stirring occasionally.

  6. 6

Assemble bowls: divide rice between two bowls, top with pork, black beans, and pico de gallo. Garnish with cilantro and a squeeze of lime. (5 minutes)
