Ingredients
- 12 oz Wheat noodles or spaghetti
- 1 lb Ground pork
- 1/4 cup Creamy peanut butter
- 3 tbsp Soy sauce
- 2 tbsp Chili oil with flakes
- 1 tbsp Black vinegar or rice vinegar
- 3 cloves Garlic, minced
- 1 tsp Fresh ginger, grated
- 1/2 cup Chicken broth
- 2 stalks Green onions, sliced
- 2 tbsp Crushed peanuts(optional)

Bring a large pot of salted water to a boil and cook noodles according to package instructions.

While noodles cook, heat a large skillet over medium-high heat and brown the ground pork until crispy and fully cooked.

In a medium bowl, whisk together the peanut butter, soy sauce, chili oil, vinegar, garlic, ginger, and chicken broth until smooth.

Drain the noodles, reserving about 1/4 cup of the starchy cooking water.

Pour the peanut sauce mixture into the skillet with the cooked pork and stir to combine over medium heat for 2 minutes.

Add the cooked noodles to the skillet and toss thoroughly, adding reserved noodle water if the sauce is too thick.

Divide the noodles into bowls and garnish with sliced green onions and crushed peanuts.
