- 60 g Gruyère cheese
- 3 Eggs
- 120 ml Heavy cream
- 60 ml Milk
- 1 tsp Curry powder
- ½ tsp Salt
- ¼ tsp Black pepper
Instructions
- 1
Preheat the oven to 190°C (375°F). In a bowl combine flour and a pinch of salt, cut in the cold butter until the mixture resembles coarse crumbs, then add ice water and mix until a dough forms; press into a 9‑inch tart pan, prick the base, and bake blind with parchment and beans for 10 minutes.

While the crust bakes, cook the bacon in a skillet over medium heat until crisp, then crumble; grate the Gruyère cheese and set aside.
- 3
In a mixing bowl whisk together eggs, heavy cream, milk, curry powder, salt, and black pepper until smooth; stir in the crumbled bacon and cheese.
- 4
Remove the crust from the oven, pour the custard mixture into it, and return to the oven; bake for 25‑30 minutes until the filling is set and lightly golden on top.
- 5
Let the quiche rest 5 minutes before slicing and serving.
