Ingredients
- 200 g boneless skinless chicken breast
- 100 ml coconut milk
- 1 tbsp red curry paste
- 2 garlic cloves
- 1 tbsp lime juice
- 2 soft hamburger buns
- 1 tbsp vegetable oil
- 1 tbsp fresh cilantro leaves(optional)
- 1/4 tsp salt
Instructions
- 1
Finely mince the garlic and set aside.
- 2
Heat the oil in a skillet over medium heat, add the garlic and sauté for 30 seconds, then stir in the red curry paste and cook 1 minute.
- 3
Add the chicken, breaking it into bite‑size pieces, and cook 5‑6 minutes until lightly browned.
- 4
Pour in the coconut milk, add the lime juice and salt, and simmer gently for 12 minutes, stirring occasionally, until the chicken is cooked through and the sauce thickens.
- 5
While the sauce simmers, split the buns and lightly toast them in a separate pan or toaster for 2 minutes.
- 6
Divide the curry chicken mixture between the two buns, garnish with cilantro if desired, and serve immediately.
