  • 1 cup kidney beans
  • 1/2 cup onion
  • 2 garlic cloves
  • 1 cup canned diced tomatoes
  • 1 tbsp curry powder
  • 1 tbsp chili powder
  • 1/2 cup beef broth
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. 1

Heat olive oil in a large pot over medium heat; add the chopped onion and minced garlic and sauté for 3‑4 minutes until softened.

Add the ground beef, breaking it up with a spoon, and cook for about 5 minutes until browned.

  3. 3

  4. 4

Add the diced tomatoes, kidney beans, and beef broth; bring to a gentle boil.

Reduce heat and simmer uncovered for 15‑20 minutes, stirring occasionally, until the chili thickens and flavors meld.

  6. 6

Taste and adjust seasoning if needed, then serve hot.
