Ingredients

  • 1/2 lb boneless, skinless chicken breast
  • 1/2 medium yellow onion
  • 2 medium carrots
  • 1/3 cup long-grain white rice
  • 2 cups chicken broth
  • 1/4 cup heavy cream
  • 1/2 cup cheddar cheese, shredded
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder(optional)
  • 1/4 tsp salt(optional)
  • 1/4 tsp black pepper(optional)

Instructions

  1. 1

Prep (10 minutes): Dice the chicken, chop the onion, and dice the carrots. Measure the rice, broth, cream, and cheese.

  2. 2

Cook (25 minutes): Heat olive oil in a pot over medium heat. Add chicken, onion, and carrots; cook 8–10 minutes until the chicken is cooked through and the vegetables begin to soften.

  3. 3

Add rice and broth: Stir in the rice, then pour in the chicken broth. Bring to a simmer, reduce heat to medium-low, and cook 15–17 minutes, stirring occasionally, until the rice is tender.

  4. 4

Finish creamy: Reduce heat to low. Stir in heavy cream and shredded cheddar until melted and the soup is creamy. Season with salt and black pepper to taste, then serve.
