  • 1 cup Jasmine rice
  • 8 cups Water or chicken stock
  • 2 pieces Century eggs, peeled and diced
  • 2 tablespoons Fresh ginger, julienned
  • 3 stalks Scallions, thinly sliced
  • 1 teaspoon Salt
  • 0.5 teaspoon White pepper
  • 1 teaspoon Sesame oil(optional)
  • 1 tablespoon Light soy sauce(optional)
  • 150 grams Lean pork, minced or sliced(optional)

Instructions

    Rinse the jasmine rice thoroughly under cold water until the water runs clear.

    In a large pot, combine the rice and the 8 cups of water or chicken stock and bring to a rolling boil.

    Once boiling, reduce the heat to low and cover the pot partially with a lid to prevent boiling over.

    Simmer the rice for 45 to 60 minutes, stirring occasionally to prevent the bottom from sticking, until the grains have broken down into a smooth porridge.

    Stir in the julienned ginger and the minced pork (if using) and cook for another 5-10 minutes.

    Add the diced century eggs and season the congee with salt and white pepper.
