Ingredients

  • 600 g Skirt steak
  • 1 Red bell pepper
  • 1 Green bell pepper
  • 1/2 Yellow onion
  • 2 tbsp Olive oil
  • 2 tbsp Lime juice
  • 2 Garlic cloves
  • 1 tsp Ground cumin
  • 1 tsp Paprika
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • 9 Romaine lettuce leaves

Instructions

  1. 1

Combine olive oil, lime juice, minced garlic, cumin, paprika, salt, and black pepper in a bowl; whisk to make a marinade.

  2. 2

Place the skirt steak in a resealable bag, pour the marinade over it, seal, and toss to coat. Marinate at room temperature for 10 minutes while you prep the vegetables.

  3. 3

Slice the bell peppers and onion into thin strips.

  4. 4

Heat a grill or heavy skillet over high heat. Remove steak from the bag, discard excess marinade, and grill 3‑4 minutes per side for medium‑rare, then let rest 5 minutes before slicing against the grain.

  5. 5

While the steak rests, add the pepper and onion strips to the hot grill, tossing for 4‑5 minutes until charred and tender.

  6. 6

Separate lettuce leaves, fill each with sliced steak, grilled peppers, and onions, and serve immediately.
