Ingredients

  • 1 lb pork shoulder (pork butt), boneless
  • 1/2 cup orange juice
  • 2 tbsp lime juice
  • 4 cloves garlic, minced
  • 1 tsp ground cumin
  • 1/2 tsp dried oregano
  • 1 tsp chili powder
  • 3/4 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 bay leaf(optional)
  • 1 tsp neutral oil (for crisping)(optional)

Instructions

  1. 1

Prep (15 minutes): Pat pork dry and season all over with salt, pepper, cumin, oregano, and chili powder. Place pork in the Instant Pot.

  2. 2

Cook (60 minutes): Add orange juice, lime juice, minced garlic, and bay leaf (if using). Pressure cook on High for 45 minutes, then allow a natural release for 15 minutes. Remove pork to a bowl and shred; spoon some cooking liquid over the meat to keep it moist.

  3. 3

Crisp (broil step included within total cook time): Spread shredded pork on a foil-lined sheet in an even layer. Drizzle lightly with oil (if using) and broil 3–5 minutes until edges are browned and crisp. Toss once and broil 1–2 minutes more if needed.
