Ingredients
- 1 cup Dried black beans
- 3 cups Water (for simmering)
- 1/2 medium Yellow onion
- 3 cloves Garlic
- 1 tbsp Olive oil
- 1/2 tsp Ground cumin
- 1/2 tsp Dried oregano
- 1/2 tsp Salt
- 1/4 tsp Black pepper
- 3/4 cup Long-grain white rice
- 1 1/2 cups Water (for rice)
Instructions
- 1
Rinse the black beans. Finely chop the onion and mince the garlic (about 10 minutes total prep).
- 2
In a pot, heat olive oil over medium heat. Add onion and cook until softened, about 3 minutes. Stir in garlic, cumin, and oregano for 30 seconds.
- 3
Add rinsed black beans, 3 cups water, salt, and black pepper. Bring to a simmer, then cook until beans are tender, about 25–30 minutes, adding a splash of water if needed to keep them covered.
- 4
While the beans finish, cook the rice: combine rice and 1 1/2 cups water in a small pot, bring to a boil, cover, and simmer until tender, about 15 minutes. Fluff with a fork.
- 5
Serve the black beans over the fluffy rice and spoon any cooking liquid on top.
