Ingredients
- 2 lbs Russet potatoes
- 1/2 lb Ground beef
- 1/2 cup Yellow onion, finely diced
- 2 cloves Garlic, minced
- 1/4 cup Tomato sauce
- 1/2 tsp Cumin
- 1/2 tsp Dried oregano
- 2 tbsp Green olives, chopped(optional)
- 2 large Eggs, beaten
- 1 cup Breadcrumbs
- 1/2 cup All-purpose flour
- 2 cups Vegetable oil for frying

Boil the peeled potatoes in salted water until tender. Drain and mash thoroughly until smooth. Let cool completely.

In a skillet, brown the ground beef with onions and garlic. Drain excess fat.

Stir in tomato sauce, cumin, oregano, and olives. Simmer for 10 minutes until the liquid has evaporated. Let the meat mixture cool.

Take a handful of mashed potato and flatten it in your palm. Place a tablespoon of the meat mixture in the center.

Fold the potato around the meat to form a smooth ball about the size of a baseball.

Dredge each ball in flour, dip into the beaten eggs, and then roll in breadcrumbs until evenly coated.

Heat oil in a deep pan to 350°F (175°C). Fry the potato balls in batches until golden brown on all sides, about 3-5 minutes.

Drain on paper towels and serve warm.
