- 8 pieces Large eggs
- 1/2 lb Breakfast sausage links or bulk
- 1 large Russet potato, diced small
- 1 cup Shredded cheddar cheese
- 2 tablespoons Whole milk
- 1 tablespoon Butter
- 2 tablespoons Vegetable oil
- 1 teaspoon Salt and black pepper
- 1/2 cup Fresh salsa(optional)
- 1 medium Diced avocado(optional)

Heat vegetable oil in a large skillet over medium-high heat and fry the diced potatoes until golden brown and crispy, about 10-12 minutes.

In a separate skillet, cook the breakfast sausage over medium heat until fully browned and crumbled; drain any excess fat.

Whisk the eggs, milk, salt, and pepper in a bowl until well combined.
