  • 6 strips Thick-cut bacon
  • 2 cups Russet potatoes, shredded
  • 3 tablespoons Unsalted butter
  • 2 tablespoons Whole milk
  • 4 slices White bread slices
  • 2 tablespoons Vegetable oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 sprig Fresh parsley(optional)

    Place bacon strips in a cold large skillet, then turn heat to medium and cook until crispy, turning occasionally.

    While bacon cooks, squeeze all excess moisture out of the shredded potatoes using a clean kitchen towel.

    Remove bacon to a paper towel-lined plate, leaving 1 tablespoon of fat in the pan; add vegetable oil and 1 tablespoon of butter.

    Spread potatoes in an even layer in the skillet, seasoning with half the salt and pepper; cook undisturbed for 5-7 minutes until golden brown.

    Flip the hash browns and cook for another 5 minutes while you whisk eggs, milk, and remaining seasoning in a small bowl.

    In a separate non-stick pan, melt 1 tablespoon of butter over medium-low heat and gently scramble the eggs until just set.
