Ingredients

  • 12 oz boneless skinless chicken breast
  • 1 tbsp chipotle in adobo sauce (minced)
  • 2 tbsp honey
  • 1 tbsp soy sauce
  • 1 tbsp lime juice
  • 1 tbsp olive oil
  • 8 leaves romaine lettuce leaves
  • 1/4 cup diced red onion
  • 1/4 tsp salt(optional)
  • 1/8 tsp black pepper(optional)

Instructions

    Prep (10 minutes): Pat chicken dry and cut into bite-size pieces. Mince chipotle in adobo. Dice the onion and juice the lime.

    Cook (20 minutes): Heat olive oil in a skillet over medium-high heat. Season chicken with salt and black pepper (if using) and cook, stirring, until browned and cooked through, about 10 minutes.

    Make glaze: Add chipotle, honey, soy sauce, and lime juice to the skillet. Stir and simmer until the sauce thickens and coats the chicken, about 5–7 minutes.
