Ingredients

  • 2 medium sweet potatoes
  • 3/4 cup chipotle barbacoa (shredded beef)
  • 1/3 cup plain Greek yogurt
  • 1 tbsp lime juice
  • 1 tsp lime zest(optional)
  • 1 tbsp olive oil
  • 1/4 tsp salt
  • 1/8 tsp black pepper

Instructions

  1. 1

Heat oven to 425°F (220°C). Scrub sweet potatoes, pat dry, and pierce several times with a fork.

  2. 2

Rub sweet potatoes with olive oil and sprinkle with salt and black pepper. Place on a baking sheet and roast for 45 minutes, until very tender.

  3. 3

While the potatoes roast, stir together Greek yogurt, lime juice, and lime zest (if using) to make the tangy yogurt-lime sauce.

  4. 4

Remove sweet potatoes and let cool 5 minutes. Slice each lengthwise and fluff the insides with a fork.

  5. 5

Spoon chipotle barbacoa into the centers of the potatoes. Drizzle with yogurt-lime sauce and serve.
