Ingredients

  • 1 cup Shredded chipotle barbacoa (cooked, beef)
  • 2 Flour tortillas (8-inch)
  • 1 cup Shredded Mexican blend cheese
  • 1/4 cup Salsa verde
  • 1 tbsp Olive oil(optional)
  • 2 tbsp Sour cream(optional)
  • 1 tbsp Lime juice(optional)
  • 1/4 tsp Salt(optional)

Instructions

  1. 1

Prep (15 minutes): If your barbacoa is not already shredded, shred it. Set out tortillas, cheese, salsa verde, and any optional toppings (sour cream and lime juice).

  2. 2

Cook (10 minutes): Heat a skillet over medium heat. Lightly brush with olive oil if using. Place 1 tortilla in the skillet, sprinkle with half the cheese, add the barbacoa, then top with the remaining cheese. Top with the second tortilla.

  3. 3

Cook (15 minutes): Cook 4–5 minutes per side until the tortillas are golden and the cheese is fully melted. Carefully flip once.

  4. 4

Finish (within cook time): Remove to a cutting board, slice into wedges, and drizzle with salsa verde. Add optional sour cream and a squeeze of lime juice if desired.
