Ingredients

  • 12 oz Chow mein egg noodles
  • 3 tbsp Canola oil
  • 3 tbsp Soy sauce
  • 0.25 cup Vegetable broth
  • 2 cups Bok choy, chopped
  • 1 cup Shredded carrots
  • 1 cup Mung bean sprouts
  • 3 cloves Garlic, minced
  • 1 tsp Fresh ginger, grated
  • 4 stalks Green onions, sliced
  • 1 tsp Granulated sugar
  • 1 tsp Cornstarch

Instructions

    Cook the chow mein noodles in boiling water according to package directions until al dente, then drain and set aside.

    In a small bowl, whisk together the soy sauce, vegetable broth, sugar, and cornstarch to create the stir-fry sauce.

    Heat 2 tablespoons of canola oil in a large wok or skillet over high heat until shimmering.

    Add the cooked noodles to the wok, spreading them out to sear for 2-3 minutes until slightly crispy, then remove noodles and set aside.
