- 10 large Eggs
- 6 cups Spinach
- 2 tbsp Soy sauce(optional)
- 1 tbsp Rice vinegar(optional)
- 2 tsp Cornstarch(optional)
- 2 tbsp Neutral oil(optional)
- 2 tbsp Green onions (chopped)(optional)
- 1/4 tsp Salt(optional)
- 1/4 tsp Black pepper(optional)

Blanch spinach 30–60 seconds, drain, and squeeze very dry. Chop finely.

Whisk 6 eggs with soy sauce, salt, pepper, and cornstarch (if using) to help crisping. Set aside.

Whisk remaining 4 eggs separately as the “wrapper” batter for a thinner layer.

Heat neutral oil in a nonstick skillet over medium heat.

Pour a thin layer of wrapper egg batter to form a small circle. When edges set, add a spoonful of spinach filling (mixed with chopped green onions if using).

Fold over carefully or cover with another thin layer of egg to seal. Cook until golden on both sides, 2–3 minutes per side.

Repeat until all batter and filling are used. Keep warm in a low oven (200°F/95°C).

Mix rice vinegar (and a splash of soy sauce if desired) for a quick dipping sauce and serve.
