Ingredients

  • 1 lb boneless, skinless chicken breast
  • 4 cups chicken broth
  • 1 cup carrots
  • 1/2 cup uncooked white rice (long-grain)
  • 1/2 medium yellow onion
  • 2 cloves garlic
  • 1 tbsp olive oil
  • 1/2 tsp dried thyme
  • 1/4 tsp salt(optional)
  • 1/4 tsp black pepper(optional)
  • 2 tbsp fresh parsley (chopped)(optional)
  • 1 tbsp lemon juice(optional)

Instructions

  1. 1

Prep (10 minutes): Dice the onion, mince the garlic, and slice or dice the carrots. Season the chicken lightly with pepper (and salt if needed).

  2. 2

Cook (20 minutes): Heat olive oil in a one-pot pot over medium heat. Sauté onion for 2 minutes, then add garlic and thyme for 30 seconds.

  3. 3

Add chicken broth and carrots. Bring to a simmer, then add the rice. Nestle the chicken into the liquid, cover, and simmer for 15 minutes, stirring once halfway through.

  4. 4

Finish: Remove the chicken to a plate, shred with two forks, then stir the shredded chicken back into the pot. Simmer uncovered 3–5 minutes until the rice is tender and the soup is slightly thickened.

  5. 5

Taste and adjust seasoning. Stir in parsley and lemon juice, then serve hot.
