Ingredients
- 2 large Boneless skinless chicken breasts, sliced into cutlets
- 1 cup Italian breadcrumbs
- 1/2 cup Grated Parmesan cheese
- 1/2 cup All-purpose flour
- 2 large Eggs, beaten
- 1 1/2 cups Marinara sauce
- 1 cup Shredded mozzarella cheese
- 4 count Hoagie or sub rolls
- 1/4 cup Vegetable oil for frying
- 1 teaspoon Dried oregano(optional)

Place flour, beaten eggs, and a mixture of breadcrumbs and parmesan into three separate shallow bowls.

Dredge each chicken cutlet in flour, dip into the egg, and then coat thoroughly with the breadcrumb mixture.

Heat vegetable oil in a large skillet over medium-high heat and fry chicken for 3-4 minutes per side until golden brown and cooked through.

While chicken fries, warm the marinara sauce in a small saucepan over low heat.

Slice the sub rolls open and place them on a baking sheet, lightly toasting them under a broiler for 1 minute.

Place the fried chicken cutlets onto the toasted rolls and spoon a generous amount of marinara sauce over the top.

Sprinkle mozzarella cheese over the sauce and return the sandwiches to the broiler until the cheese is melted and bubbly.

Close the sandwiches and serve immediately while the cheese is hot.
