Ingredients

  • 10 oz boneless, skinless chicken breast
  • 1 cup bell peppers (mixed colors), sliced
  • 1/2 cup yellow onion, sliced
  • 2 tsp fajita seasoning
  • 1 tbsp olive oil
  • 2 pcs flour tortillas (8-inch)
  • 1/2 cup shredded cheese (cheddar or Mexican blend)
  • 1/4 tsp salt(optional)
  • 1/8 tsp black pepper(optional)

Instructions

  1. 1

Prep (10 minutes): Slice the chicken into thin strips, slice the bell peppers and onion, and season the chicken with fajita seasoning (and a pinch of salt/pepper if desired).

  2. 2

Cook (15 minutes): Heat olive oil in a large skillet over medium-high heat. Add chicken strips and cook 4–5 minutes until mostly cooked, stirring frequently.

  3. 3

Add bell peppers and onion to the skillet and cook 8–10 minutes more, stirring occasionally, until the vegetables are tender and the chicken is fully cooked.

  4. 4

Assemble and crisp: Place tortillas in the skillet (or on a clean pan). Sprinkle cheese over half of each tortilla, add the chicken-fajita mixture, fold over, and cook 1–2 minutes per side until golden and the cheese melts.
