Ingredients

  • 2 pieces Tortillas (large flour)
  • 1 cup Bell pepper (any color), sliced
  • 1/2 cup Onion, sliced
  • 1 tbsp Olive oil
  • 1 cup Shredded cheese (cheddar or Mexican blend)
  • 1/4 cup Salsa
  • 2 tbsp Sour cream
  • 1/8 tsp Salt(optional)
  • 1/8 tsp Black pepper(optional)

Instructions

  1. 1

Prep (10 minutes): Slice the bell pepper and onion. Shred or measure the cheese. Set out salsa and sour cream.

  2. 2

Cook (15 minutes): Heat olive oil in a skillet over medium heat. Add bell pepper and onion, season with salt and black pepper (if using), and sauté until tender, about 8–10 minutes.

  3. 3

Assemble: Lay tortillas on a clean surface. Sprinkle cheese over half of each tortilla, then add the sautéed veggies. Fold over the tortillas.

  4. 4

Cook to crisp: Wipe the skillet if needed, then toast quesadillas over medium heat 2–3 minutes per side until golden and the cheese melts.

  5. 5

Serve: Cut into wedges and serve immediately with salsa and sour cream.
