Ingredients

  • 300 g Russet potatoes
  • 150 g Mexican chorizo
  • 1 tbsp Olive oil
  • 1/4 cup Yellow onion(optional)
  • 1 clove Garlic(optional)
  • 1 tsp Taco seasoning(optional)

  • 6 small Corn tortillas
  • 1/2 cup Shredded cheese (cheddar or Mexican blend)
  • 2 tbsp Fresh cilantro

Instructions

  1. 1

Prep (10 minutes): Dice potatoes into small 1/4-inch cubes. Finely chop onion and mince garlic (if using).

  4. 4

Assemble: Warm tortillas in a dry skillet or microwave. Spoon the potato-chorizo mixture into tortillas, top with shredded cheese, and melt briefly (about 30–60 seconds). Finish with cilantro and serve.
