- 4 large Flour tortillas
- 1 cup Shredded Monterey Jack cheese
- 1 cup Shredded sharp cheddar cheese
- 1 tablespoon Unsalted butter
- 0.5 cup Salsa(optional)
- 0.25 cup Sour cream(optional)

Mix the shredded Monterey Jack and cheddar cheeses together in a small bowl.

Heat a large non-stick skillet over medium heat and add a small amount of butter to coat the surface.

Place one tortilla in the skillet and sprinkle approximately half a cup of the cheese mixture evenly over the surface.

Top with a second tortilla and cook for 2-3 minutes until the bottom tortilla is golden brown and crisp.

Carefully flip the quesadilla using a large spatula and cook the other side for another 2 minutes until the cheese is fully melted.

Repeat the process for the remaining tortillas and cheese.

Remove from heat, let sit for one minute, then slice into wedges and serve with salsa and sour cream.
