Ingredients

  • 1 cup about 150 carnitas (shredded, cooked)
  • 2 medium flour tortillas
  • 3/4 cup Oaxaca-style cheese (or mozzarella + a little Oaxaca/quesillo if available)
  • 1 small lime
  • 1 tbsp neutral oil (for skillet)(optional)
  • 1/4 tsp salt(optional)

Instructions

  1. 1

Prep (10 minutes): Shred or warm the carnitas. Grate or tear the Oaxaca-style cheese. Slice the lime into wedges.

  2. 2

Cook (20 minutes): Heat a skillet over medium heat and add oil if using. Place 1 tortilla in the skillet and sprinkle half the cheese over it. Add the carnitas, then top with the remaining cheese. Fold the tortilla in half (or cover with the second tortilla if you prefer a double-layer quesadilla) and cook 4–5 minutes until golden.

  3. 3

Flip and finish: Flip the quesadilla carefully and cook another 4–5 minutes until the second side is golden and the cheese is melted. If needed, cover the skillet for 1–2 minutes to help melt the cheese.

  4. 4

Serve: Turn off the heat, squeeze lime over the quesadilla, slice, and serve immediately.
