Ingredients
- 120 g All-purpose flour
- 60 ml Warm water
- 1 tbsp Olive oil
- 1/2 tsp Salt
- 1 tbsp Unsalted butter
- 1 large Yellow onion
- 80 g Gruyère cheese
- 1 tsp Fresh thyme leaves(optional)
Instructions
- 1
In a bowl combine flour, warm water, olive oil, and salt; stir until a soft dough forms. Let rest for 5 minutes.
- 2
While the dough rests, thinly slice the onion. Melt butter in a skillet over medium heat, add onions, and cook, stirring occasionally, until deep golden and sweet, about 8 minutes.
- 3
Preheat a non‑stick skillet or griddle over medium‑high heat. Roll the rested dough into a 20 cm (8‑inch) circle and brush the surface with a little olive oil.
- 4
Cook the flatbread for 2–3 minutes per side until lightly browned. Transfer to a baking sheet, spread the caramelized onions evenly, sprinkle grated Gruyère over the top, and add thyme if using.
- 5
Broil or place under a hot grill for 1–2 minutes until the cheese melts and bubbles. Slice and serve warm.
