- 4 lbs Whole roasting chicken
- 1/2 cup Unsalted butter, softened
- 1 tablespoon Dried culinary lavender
- 1 teaspoon Pure vanilla bean paste
- 2 whole Lemons, thinly sliced
- 2 tablespoons Honey
- 2 teaspoons Kosher salt
- 1 teaspoon Black pepper
- 4 stems Fresh thyme sprigs(optional)
- 2 tablespoons Olive oil

Preheat your oven to 425°F (220°C) and pat the chicken completely dry with paper towels.

In a small bowl, mix the softened butter, lavender, vanilla bean paste, salt, and pepper until well combined.

Gently loosen the skin over the chicken breast and thighs, then spread half of the lavender-vanilla butter underneath the skin.

Rub the remaining butter over the outside of the chicken and tie the legs together with kitchen twine.

Toss the lemon slices with honey and olive oil, then arrange them in the bottom of a roasting pan or cast-iron skillet.

Place the chicken on top of the lemon slices and roast for 15 minutes to start the caramelization process.

Reduce oven temperature to 375°F (190°C) and continue roasting for 50-60 minutes, basting occasionally with pan juices.
