Ingredients

  • 2 slices Sourdough bread
  • 3 ounces Fresh mozzarella cheese
  • 2 slices Tomato
  • 1 tablespoon Basil pesto
  • 1 tablespoon Unsalted butter
  • 1 teaspoon Balsamic glaze(optional)
  • 4 leaves Fresh basil leaves(optional)

Instructions

    Spread the basil pesto evenly on one side of each bread slice.

    Layer the fresh mozzarella and tomato slices onto one piece of bread. If using, drizzle with balsamic glaze and add fresh basil leaves.

    Top with the second slice of bread, pesto-side down.

    Melt half the butter in a non-stick skillet over medium-low heat.

    Place the sandwich in the skillet and cook for 3-4 minutes until the bottom is golden brown.

    Lift the sandwich, add the remaining butter to the pan, flip the sandwich, and cook for another 3-4 minutes until the cheese is melted and the bread is toasted.

    Remove from heat, let sit for one minute, then slice and serve.
