Ingredients

  • 2 pieces boneless, skinless chicken breast
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 2 tbsp olive oil
  • 2 medium zucchini
  • 2 tbsp balsamic vinegar
  • 1 cup cherry tomatoes
  • 4 oz fresh mozzarella
  • 2 cloves garlic(optional)
  • 2 tbsp fresh basil(optional)

Instructions

  1. 1

Prep (10 minutes): Slice zucchini into thin half-moons, halve cherry tomatoes, and slice mozzarella. Pat chicken dry and season both sides with salt and pepper.

  2. 2

Cook zucchini (about 5 minutes): Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add zucchini and cook, stirring, until just tender, about 4–5 minutes. Stir in balsamic vinegar and cook 30–60 seconds. Transfer zucchini to plates.

  3. 3

Cook chicken (about 15 minutes): Add remaining 1 tbsp olive oil to the skillet. Cook chicken until browned and cooked through, about 6–8 minutes per side depending on thickness. If using garlic, add minced garlic during the last 1–2 minutes.

  4. 4

Finish with Caprese topping (about 5 minutes): Reduce heat to medium-low. Top each chicken breast with tomatoes and mozzarella. Cover the skillet for 2–3 minutes until mozzarella softens, then remove from heat. Spoon any pan juices over the chicken.

  5. 5

Serve: Place chicken over the sautéed zucchini and garnish with basil if desired.
