Ingredients

  • 2 pieces boneless, skinless chicken breast
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 2 tbsp olive oil
  • 1 cup cherry tomatoes
  • 6 oz fresh mozzarella
  • 0.25 cup balsamic vinegar
  • 1 clove garlic(optional)
  • 0.25 cup fresh basil(optional)

Instructions

  1. 1

Prep (10 minutes): Pat chicken dry, then season both sides with salt and black pepper. Halve the cherry tomatoes. Tear or slice mozzarella. Mince garlic if using.

  2. 2

Cook (15 minutes): Heat 1 tbsp olive oil in a skillet over medium-high heat. Sear chicken 5–6 minutes per side until cooked through (165°F/74°C). Transfer to a plate.

  3. 3

Cook the balsamic drizzle (within the same 15 minutes): Reduce heat to medium. Add remaining 1 tbsp olive oil, then sauté garlic for 30 seconds (if using). Pour in balsamic vinegar and simmer 2–3 minutes until slightly thickened.

  4. 4

Finish: Add tomatoes to the skillet and toss for 1–2 minutes just to warm. Return chicken to the skillet (or plate it) and top with tomatoes and mozzarella. Cover for 1 minute to melt the cheese. Drizzle with balsamic reduction and top with basil (if using).
