Ingredients

  • 2 pounds Chicken wings
  • 2 tablespoons Paprika
  • 1 teaspoon Cayenne pepper
  • 1 teaspoon Dried thyme
  • 1 teaspoon Garlic powder
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 1/2 cup Mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Lemon juice
  • 1 tablespoon Capers(optional)
  • 2 tablespoons Fresh parsley, chopped(optional)

Instructions

  1. 1

    1. In a large bowl combine paprika, cayenne, thyme, garlic powder, salt, black pepper, and olive oil to form a paste. Toss the chicken wings in the spice paste until evenly coated; let rest 10 minutes.

  2. 2

    2. Preheat a smoker to 225°F (107°C). Arrange the seasoned wings on the smoker rack, ensuring they are not touching, and smoke for 60 minutes, turning once halfway through.

  3. 3

    3. Increase the smoker temperature to 350°F (177°C) and continue cooking for an additional 20 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is crisp.

  4. 4

    4. While the wings finish cooking, whisk together mayonnaise, Dijon mustard, lemon juice, and capers (if using) to make the remoulade; stir in chopped parsley and season with a pinch of salt.

  5. 5

    5. Remove the wings from the smoker, let rest 5 minutes, then serve hot with the creamy remoulade on the side.
