Ingredients

  • 150 g Plant-based sausage (crumbled)
  • 1 cup Long-grain white rice
  • 1/2 cup Red bell pepper, diced
  • 1/2 cup Green bell pepper, diced
  • 1/2 cup Onion, finely chopped
  • 1 cup Canned diced tomatoes (no‑salt added)
  • 2 cup Chicken or vegetable broth
  • 2 tbsp Cajun seasoning blend
  • 1 tbsp Olive oil
  • 1 tbsp Fresh parsley, chopped (for garnish)(optional)

Instructions

  1. 1

Heat olive oil in a large heavy‑bottomed pot over medium heat; add the crumbled plant‑based sausage and sauté 3–4 minutes until lightly browned.

  2. 2

Add the onion, red and green bell peppers; cook, stirring frequently, until softened, about 5 minutes.

  3. 3

Stir in the Cajun seasoning and cook 1 minute to release aromatics.

  4. 4

Add the rice, diced tomatoes, and broth; bring to a gentle boil, then reduce heat to low, cover, and simmer 20–25 minutes until the rice is tender and liquid is absorbed.

  5. 5

Remove from heat, let stand covered 5 minutes, then fluff with a fork and garnish with parsley if desired.
