Ingredients

  • 12 oz boneless, skinless chicken breast
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1.5 tbsp olive oil
  • 3 cloves garlic
  • 1 large lemon
  • 0.5 cup chicken broth (or stock)
  • 1 tbsp unsalted butter(optional)
  • 0.5 tsp dried oregano(optional)
  • 2 cups cooked white rice
  • 2 tbsp fresh parsley (optional garnish)(optional)

Instructions

  1. 1

Prep (10 minutes): Cut chicken into bite-size pieces. Mince garlic. Zest and juice the lemon.

  2. 2

Cook (20 minutes): Heat olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper, then sear until browned and cooked through, 8–10 minutes, stirring occasionally.

  3. 3

In the same skillet, reduce heat to medium. Add garlic and cook for 30–60 seconds until fragrant. Stir in chicken broth, lemon juice (and a little zest), oregano (if using), and butter (if using). Simmer 3–4 minutes to lightly thicken and coat the chicken.

  4. 4

Serve: Spoon fluffy rice into bowls, top with the chicken and garlic-lemon sauce, and garnish with parsley if desired.
