Ingredients

  • 6 large eggs
  • 2 flour tortillas (10-inch)
  • 3/4 cup shredded cheddar cheese
  • 1 cup frozen hash browns
  • 2 tbsp butter
  • 2 tbsp milk(optional)
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup salsa(optional)

Instructions

  1. 1

Cook the hash browns in 1 tbsp butter in a nonstick skillet over medium heat for 8-10 minutes, stirring occasionally, until golden and crispy. Season with a pinch of salt and pepper, then transfer to a plate.

  2. 2

Whisk the eggs with milk, salt, and pepper. Melt the remaining 1 tbsp butter in the same skillet over medium-low heat, pour in the eggs, and gently scramble for 3-4 minutes until softly set.

  3. 3

Warm the tortillas in a dry skillet or microwave for 20-30 seconds until pliable.

  4. 4

Divide the scrambled eggs, hash browns, and cheddar evenly between the tortillas, adding salsa if using.

  5. 5

Fold in the sides of each tortilla and roll up tightly into a burrito. Serve immediately, or return to the skillet seam-side down for 1-2 minutes per side to crisp and melt the cheese.
