Ingredients

  • 8 Corn tortillas
  • 2 cans Canned black beans, drained and rinsed
  • 1 teaspoon Cumin
  • 0.5 teaspoon Garlic powder
  • 2 cups Shredded lettuce
  • 1 large Tomato, diced
  • 0.5 cup Shredded cheese
  • 1 Lime, cut into wedges
  • 2 tablespoons Vegetable oil
  • 0.25 cup Sour cream(optional)

    Preheat oven to 400°F (200°C). Lightly brush both sides of the tortillas with oil and place them on a baking sheet. Bake for 4-5 minutes per side until crisp and golden.

    While tortillas bake, place the black beans in a small saucepan over medium heat. Add cumin, garlic powder, and a splash of water. Mash about half of the beans with a fork to create a creamy texture.

    Cook the beans for 5 minutes until heated through and thickened.

    Spread a generous layer of the bean mixture onto each crispy tortilla.

    Top with shredded lettuce, diced tomatoes, and cheese.
