Ingredients

  • 1/2 cup Black beans (cooked, drained)
  • 1/2 cup Shredded cheese (cheddar or Mexican blend)
  • 2 Flour tortillas (8-inch)
  • 1/2 Avocado
  • 1/4 cup Salsa
  • 1 tsp Olive oil (for pan)(optional)
  • 1/4 tsp Ground cumin(optional)
  • 1/4 tsp Garlic powder(optional)
  • 1/8 tsp Salt(optional)

Instructions

  1. 1

Prep (10 minutes): Mash the black beans in a bowl with cumin, garlic powder, and a pinch of salt (if using). Slice the avocado and set out the salsa and cheese.

  2. 2

Assemble: Heat a nonstick skillet over medium heat. Place 1 tortilla in the pan, sprinkle half the cheese over it, add the mashed black beans, then top with the remaining cheese. Top with the second tortilla.

  3. 3

Cook (12 minutes total): If needed, lightly brush the top tortilla with a little olive oil. Cook 4–6 minutes per side, pressing gently with a spatula, until both tortillas are golden and the cheese is melted.

  4. 4

Serve: Remove from the skillet, rest 1 minute, slice into wedges, and serve with avocado and salsa.
